Tasty Tuesday - Mexican Stuffed Shells


In honor of Tasty Tuesday parade of foods over at "Balancing Beauty and bedlam" Here: http://inpassionatepursuit.blogspot.com/ I'm posting a tried and true recipe that I've made many times through out the years. It's Mexican Stuffed shells , adults and kids approve ! My kids have requested it at times even !

Mexican Stuffed Shells

Ingredients :


  • 24 uncooked jumbo pasta shells

  • 1 pound of lean ground beef

  • 2 cups of salsa

  • 1 can of tomato sauce (8 oz)

  • 1 cup of frozen corn

  • 1/2 cup canned black beans, rinsed and drained

  • 1 cup 4 ounces of Mexican cheese blend or cheddar cheese

Toppings:



  • 8 tablespoons reduced fat sour cream

  • 8 tablespoons salsa

  • 1/4 cup sliced ripe olives

  • 1/4 cup sliced green onions

directions:


cook pasta according to package directions. drain well. In a non stick skillet, cook beef over medium heat until no longer pink, drain. Stir in the salsa, tomato sauce, corn, and beans. Spoon into pasta shells. Place into a 9x13" baking dish sprayed with nonstick cooking spray, such as Pam. Sprinkle with cheese. Cover and bake at 350* for 25-30 minutes or until heated through. Top with sour cream, salsa, olives and onions. Servings: 8

  2. Thanks so much for trying to link up. Unfortunately, Mr. Linky was working yesterday but went down sometime all around blogland. It's not working anywhere so he has been coming and going. They have been trying to work this glitch out and it's been great for awhile but it just happened again. My apologies. Hope you can join us again next week and he'll be back up and working. :)

  3. Mmmmmm! I'm going to have to try that! I love Mexican. However, black beans freak my kids out! I have a yummy chimichanga recipe that is a definite keeper. I'll post it next week. I'm starving now!
