Tasty Tuesday Recipe Parade


In honor of Tasty Tuesday Recipe Parade over at Balancing Beauty and Bedlam. http://inpassionatepursuit.blogspot.com/ I'll contribute with this recipe . It has been in our family for many years, generations even. It is my stepdad's mother's recipe and it was his absolute favorite cookie that she would bake for him as a child, then teen, then adult ! I can remember Grandma's cookie package arriving in the mail in december. A huge box of Christmas cookie's that Grandma made herself. She'd line up a batch of cookies wrapped in wax paper, then wrapped in saran wrap. These were all then lined up in a box to ship, in between the layers of cookie tube rolls, were the bubble wrap so the cookies would arrive in a whole cookie not pieces. Sometimes Grandma used the paper towel tubes to line the cookie up inside then wrap twice, once with saran wrap and the wax paper. We all would become very excited when this package arrived. There was so many cookies inside that my mom had all kinds of cookies to put out during the holiday parties, hot chocolate nights with cookies, and taking a plate to a cookie exchange or other type of party at a friends house.

So here is the recipe for one of Grandma's famous cookie's.


POTATO CHIP COOKIES


INGREDIENTS:


  • 1 1/2 CUP FLOUR

  • 1 CUP OF BUTTER

  • 1 EGG YOLK

  • 1 TSP VANILLA

  • 1 CUP CRUSHED POTATO CHIPS

  • 1 CUP POWDERED SUGAR

  • 1/2 CUP CHOPPED NUTS *any type you have on hand*

DIRECTIONS:



  • cream butter, sugar, until fluffy then add egg yolk, vanilla. Then beat again.

  • Add potato chips, flour and nuts

  • drop by teaspoonfuls on a greased cookie sheet.

  • bake at 350*degrees for 15 minutes.

  • While warm sprinkle with powdered sugar.
